Buckwheat Chickpea Salad
Ingredients:
- 1 cup buckwheat
- 1 cup cooked chickpeas
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped cucumber
- 1/4 cup chopped fresh green onions
- 1/4 cup fresh chopped parsley
- 1/4 cup Turna Extra Virgin Olive Oil
- 1 tsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup crumbled feta cheese (optional)
Instructions:
- Prepare the Buckwheat:
Rinse the buckwheat well, then cook it in 2 cups of water. Once cooked, set it aside to cool.
- Prepare the Vegetables:
Chop the red bell pepper, cucumber, and green onions. Chop the fresh parsley as well.
- Combine the Ingredients:
In a large mixing bowl, combine the cooked buckwheat, chickpeas, chopped vegetables, and fresh parsley.
- Prepare the Dressing:
In a small bowl, mix the Turna Extra Virgin Olive Oil, lemon juice, salt, and black pepper.
- Mix the Salad:
Pour the dressing over the salad and toss everything together until well combined.
- Optional Additions:
If desired, crumble some feta cheese over the top for extra flavor.
- Serve:
Serve the salad chilled or at room temperature. It’s perfect for a light lunch or as a side dish!Enjoy!
