Ingredients (Serves 2–3):
For the Gnocchi:

3 medium potatoes

1 cup flour (adjust as needed)

1 egg

1 teaspoon salt
For the Sauce:

3 tablespoons Turna Extra Virgin Olive Oil

2 garlic cloves, finely chopped

3 ripe tomatoes, grated

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon oregano or basil

1 tablespoon grated parmesan (for serving)
Instructions:

Prepare the Gnocchi: Boil the potatoes, peel, and mash them. Add egg, salt, and flour, and knead until soft. Roll the dough into ropes and cut into small gnocchi pieces.

Boil the Gnocchi: Cook the gnocchi in salted boiling water. When they float to the surface, drain them.

Make the Sauce: Heat Turna Extra Virgin Olive Oil in a pan. Sauté the garlic, add grated tomatoes, salt, pepper, and oregano. Simmer for 10 minutes until thickened.

Combine: Add the cooked gnocchi to the sauce and mix gently.

Serve: Top with grated parmesan and a drizzle of Turna Extra Virgin Olive Oil before serving.
