Ingredients (Serves 2–3):

For the Gnocchi:

  • 3 medium potatoes

  • 1 cup flour (adjust as needed)

  • 1 egg

  • 1 teaspoon salt

For the Sauce:

  • 3 tablespoons Turna Extra Virgin Olive Oil

  • 2 garlic cloves, finely chopped

  • 3 ripe tomatoes, grated

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon oregano or basil

  • 1 tablespoon grated parmesan (for serving)

Instructions:

  1. Prepare the Gnocchi: Boil the potatoes, peel, and mash them. Add egg, salt, and flour, and knead until soft. Roll the dough into ropes and cut into small gnocchi pieces.

  2. Boil the Gnocchi: Cook the gnocchi in salted boiling water. When they float to the surface, drain them.

  3. Make the Sauce: Heat Turna Extra Virgin Olive Oil in a pan. Sauté the garlic, add grated tomatoes, salt, pepper, and oregano. Simmer for 10 minutes until thickened.

  4. Combine: Add the cooked gnocchi to the sauce and mix gently.

  5. Serve: Top with grated parmesan and a drizzle of Turna Extra Virgin Olive Oil before serving.
