Ingredients:

1 cup chickpeas (soaked overnight in water)

1 small onion, chopped

2 garlic cloves, crushed

1/2 cup fresh parsley, chopped

1 tsp cumin

1 tsp coriander (optional)

1 tsp salt

1/2 tsp black pepper

3 tbsp Turna Extra Virgin Olive Oil (for the mixture)

Extra 1/4 cup Turna Sunflower Oil (for frying)
Instructions:

Prepare the Chickpeas: Drain the soaked chickpeas and process them in a food processor until they form a smooth paste.

Make the Mixture: Add the chopped onion, garlic, parsley, cumin, coriander, salt, pepper, and 3 tablespoons of Turna Extra Virgin Olive Oil to the chickpea paste. Blend until the mixture is uniform.

Shape the Falafel: Take small portions of the mixture and roll them into walnut-sized balls.

Fry: Heat Turna Sunflower Oil in a pan and fry the falafel balls until golden brown on all sides.

Serve: Serve hot. Pair with yogurt sauce or tahini sauce if desired.
