Ingredients:

For the Köfte (Meatballs):

  • 2 cups fine bulgur

  • 1 cup semolina

  • 1 cup hot water

  • 1 tsp salt

  • 1 tsp red pepper flakes

  • 1 tsp cumin

  • 1 tsp black pepper

  • 1/2 tea glass Turna Riviera Olive Oil

  • 1/2 cup flour (optional, add while kneading if needed)

For the Sauce:

  • 2 tablespoons Turna Riviera Olive Oil

  • 1 onion (finely chopped)

  • 1 tsp tomato paste

  • 1 tea glass hot water

  • 1 tsp red pepper flakes

  • Salt and black pepper

Instructions:

Prepare the Köfte Mixture:
Place the bulgur in a large bowl. Pour hot water over it and let it sit for 10–15 minutes until the bulgur softens. Then add semolina, salt, red pepper flakes, cumin, black pepper, and Turna Riviera Olive Oil. Knead the mixture thoroughly. If the dough feels too soft, gradually add flour until it becomes firm and moldable.

Take walnut-sized portions of the mixture and roll them into balls. Gently press the center of each ball with your fingertip to form a small indentation. Repeat until all the mixture is used.

Cook the Köfte:
Bring a pot of water to a boil. Add a bit of salt, then drop the shaped köftes into the boiling water. Boil for about 10–15 minutes until they rise to the surface. Remove and drain.

Prepare the Sauce:
In a pan, sauté the chopped onion in Turna Riviera Olive Oil until lightly golden. Add the tomato paste and cook for a few minutes. Add the hot water, red pepper flakes, salt, and black pepper. Stir well.

Combine:
Add the boiled köftes into the sauce. Stir gently and cook together for another 2–3 minutes. Remove from heat.
