Ingredients:

  • 1 cup fine bulgur (for kısır)

  • 2 cups hot water

  • Juice of 1 lemon

  • 3 tablespoons Turna Sunflower Oil

  • 1 teaspoon salt

  • 1/2 teaspoon crushed red pepper flakes

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon cumin

  • 1 tomato, diced

  • 1 carrot, diced

  • 1 cucumber, diced

  • 1/2 cup chopped fresh mint

  • 1/2 cup chopped fresh parsley

  • 1/2 cup olives (optional)

  • 1/2 cup pomegranate molasses (optional)

Instructions:

Prepare the Bulgur:
Place the fine bulgur in a large bowl. Pour hot water over it and stir briefly. Cover the bowl and let the bulgur soak and swell for about 15 minutes.

Prepare the Vegetables:
Dice the tomato, cucumber, and carrot. Chop the fresh mint and parsley. If using olives, slice them as well.

Add Spices and Sauce to the Bulgur:
Once the bulgur is fully soaked, add Turna Sunflower Oil, salt, crushed red pepper, black pepper, cumin, lemon juice, and (optionally) pomegranate molasses. Mix well to evenly distribute the spices and sauce throughout the bulgur.

Add the Vegetables:
Finally, add the diced vegetables (tomato, cucumber, carrot) and the chopped herbs (mint and parsley) to the bulgur. Mix again until everything is well combined.

Serve:
Cover the kısır with a clean cloth and let it rest for 10–15 minutes. Then serve fresh and chilled.
