Prepare the Zucchini: Place the grated zucchini in a large bowl, sprinkle with salt, and let it sit for 10 minutes. Then, squeeze out the excess water and drain.
Make the Batter: Transfer the zucchini to a large mixing bowl. Add eggs, flour, cheese, mint, dill, green onions, salt, and black pepper. Mix well until you get a smooth batter.
